Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the baby spinach, unsweetened shredded coconut, and vanilla extract.
  3. Add the ice cubes and fine sea salt.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds, until completely smooth.
  5. Check the consistency. If too thick, blend in 1–2 tablespoons additional coconut milk; if too thin, add a few extra ice cubes and blend again.
  6. Pour into a 16-ounce glass and serve immediately.
