Baking tools for this recipe

Instructions

  1. Refrigerate the unopened cans of sea coconut and longans until well chilled, at least 2 hours.
  2. Drain the sea coconut and longans over a bowl, reserving the syrups. Measure 200 ml of the mixed syrup and set the rest aside for another use.
  3. Whisk the honey into the 200 ml measured syrup until dissolved, then stir in the calamansi lime juice. Taste and add a little more honey or lime if needed.
  4. Cut the sea coconut into small, bite-size pieces, about 1/2 inch (1 cm). Mix the sea coconut, longans and nata de coco in a bowl.
  5. Mound 150 g of the shaved ice in each of 4 chilled bowls, spoon a quarter of the fruit mixture around and over each mound and spoon about 55 ml of the syrup over the top. Serve immediately.

Tips

  • Taste the syrup only once it is cold; sweetness reads much lower at ice temperature.
  • Keep the ice as fine and fluffy as possible so it soaks up the syrup instead of floating in it.
  • Contains coconut; check with your doctor if you avoid tree nuts.
  • Contains honey: do not serve to infants under 1 year old.
