A vanilla and cocoa marble sheet cake baked with tart sour cherries, then covered with a thick layer of German vanilla pudding buttercream and a thin dark chocolate glaze. The red, white and black layers are the Snow White colors that give it its name. Makes 20 pieces in about 6 hr 45 min.

Scales from a half to a double batch; give a bigger batch a little more time.
2 cups (500 ml)whole milk, for the pudding buttercream
Make the pudding first. Whisk 100 ml of the whole milk with the granulated sugar and cornstarch. Bring the remaining milk to a boil with the vanilla bean and seeds, remove the pod, whisk in the cornstarch mixture and boil, whisking, until very thick, 1 to 2 minutes. Press plastic wrap onto the surface and cool to room temperature, about 1 1/2 hours (do not chill).
Heat the oven to 350°F (175°C). Butter the pan and line it with parchment.
For the cake, beat the softened unsalted butter, granulated sugar, vanilla extract and fine salt until pale and fluffy, about 4 minutes. Beat in the eggs one at a time. Whisk the all-purpose flour with the baking powder and mix it in alternately with 100 ml of the whole milk until smooth.
Spread a little more than half the batter in the pan. Stir the cocoa powder and the remaining 30 ml whole milk into the rest of the batter and spread it over the light layer. Scatter the drained sour cherries over the top and press them in lightly; they sink as the cake bakes and make the marbling.
Bake until risen and a skewer in the center comes out clean (apart from cherry juice), 35 to 40 minutes. Cool completely in the pan on a rack, about 1 hour.
For the buttercream, beat the soft unsalted butter until very pale and creamy, about 5 minutes. Beat in the room-temperature pudding one spoonful at a time until smooth and fluffy.
Spread the pudding buttercream evenly over the cooled cake and chill until firm, about 1 hour.
For the glaze, melt the dark chocolate and unsalted butter over barely simmering water, stirring until smooth, about 3 minutes. Cool 5 minutes, pour over the chilled buttercream and spread quickly into a thin, even layer. Chill until set, about 30 minutes, then cut into 20 pieces with a hot knife.
Tips
The pudding and butter must be the same room temperature or the buttercream will curdle; if it does, warm the bowl briefly and beat again.
Drain the cherries thoroughly and pat them dry so they do not make wet pockets in the cake.
Let the glaze cool slightly before pouring so it does not melt the buttercream.
Good with coffee with cream.

How long does it take to make schneewittchenkuchen (snow white cherry sheet cake)?
Plan on 40 minutes of prep and 50 minutes of cooking, plus 5 hours 15 minutes to rise, chill and rest. The recipe makes 20 pieces.
How should I store schneewittchenkuchen (snow white cherry sheet cake)?
Refrigerate, covered, up to 4 days; let pieces stand 10 minutes before serving.
Can I make schneewittchenkuchen (snow white cherry sheet cake) ahead?
Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.
Can I use a different form of vanilla?
Yes. This recipe uses 1 vanilla bean, split, seeds scraped. Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
Serve it with coffee with cream.
Variations
Individual portions: bake in two 12-cup muffin pans lined with paper cases for 20 to 22 minutes, pipe the buttercream on top and dip in the glaze.
Orange-zest version: beat 2 tsp (4 g) finely grated orange zest into the cake butter and sugar; times unchanged.
Wave pattern (Donauwelle style): after adding the glaze, drag a fork through it in waves before it sets; times unchanged.
Cherry-liqueur version: brush the cooled cake with 2 tbsp (30 ml) kirsch before adding the buttercream.
