Baking tools for this recipe

Instructions

  1. Mix the flour, sugar, yeast and salt. Add the milk, butter, eggs, yolk, orange blossom water and zests and knead 10 minutes until smooth, shiny and elastic.
  2. Cover and let rise 1 1/2 to 2 hours until doubled.
  3. Punch the dough down and shape into a smooth ball. Poke a large hole through the middle and stretch into a ring about 12 inches (30 cm) across, with a wide center hole because it will shrink as it rises.
  4. Transfer to a parchment-lined sheet. If using a figurine or dried bean, wrap it in foil and push it into the underside of the ring. Cover and let rise 1 hour.
  5. Heat the oven to 350 F (175 C). Brush the ring with beaten egg and decorate with the candied fruit, sugar and almonds.
  6. Bake 22 to 28 minutes until deep golden; the internal temperature should reach 190 F (88 C). Cool on a rack before slicing.

Tips

  • Warn everyone before serving if a figurine is hidden; it is a choking hazard.
  • Fine zest and orange blossom water give the signature aroma.
  • Slice horizontally and fill with whipped cream if you like.
  • If baking a figurine or bean inside, wrap it in foil and warn guests about the choking hazard.
