Instructions

  1. Add 1/2 cup whole milk and 2 cups vanilla ice cream to a blender.
  2. Add 1/2 cup frozen pineapple, 1/2 tsp pure vanilla extract, 2 tbsp brown sugar, and 1/4 tsp ground cinnamon.
  3. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  4. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  5. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream.
  6. Serve immediately with a wide straw and long spoon.

Tips

  • Adding brown sugar and cinnamon replicates the caramelized cake flavor; if you don't have brown sugar, substitute with white sugar and a pinch of molasses.
