  • ½ cup (120.0 g)ice cubes

Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the frozen pineapple chunks, peeled chopped kiwi, and chopped apple along with the vanilla extract.
  3. Add the ice cubes and fine sea salt.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds, until completely smooth.
  5. Check the consistency. Blend in 1–2 tablespoons additional coconut milk if too thick, or a few extra ice cubes/frozen fruit if too thin.
  6. Pour into a 16-ounce glass and serve immediately.

Tips

  • For a sweeter smoothie, add a small amount of honey or maple syrup. To make ahead, prepare the fruit and freeze in portions, then blend with coconut milk and ice just before serving.
