Instructions
- Place fresh pineapple chunks in a blender and purée until smooth. Strain through a fine mesh sieve to remove fibrous pieces, reserving about 1 1/2 cups (360 ml) of smooth pineapple purée.
- In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, vanilla bean seeds and pod, and fine sea salt. Warm over medium heat, stirring occasionally, until sugar dissolves and mixture reaches 170°F (77°C), just before simmering.
- Remove from heat and let the vanilla infuse for 15 minutes. Remove the vanilla bean pod and discard.
- Stir the pineapple purée and fresh lemon juice into the cooled vanilla cream mixture. Chill the mixture in the refrigerator for at least 4 hours or until thoroughly cold.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 30-45 minutes, until it reaches soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 3 hours to firm up before serving.
