Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the frozen pineapple chunks, shredded coconut, and 1/2 teaspoon pure vanilla extract to the blender.
  3. Add the ice cubes and pinch of fine sea salt.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds, until completely smooth.
  5. Check consistency. Blend in 1–2 tablespoons additional coconut milk if too thick, or a few extra ice cubes or frozen pineapple if too thin.
  6. Pour into a 16-ounce glass and serve immediately.
