Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the pitted Medjool dates, pure vanilla extract, and a pinch of fine sea salt.
  3. Add the ice cubes to the blender.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds until completely smooth.
  5. Check the consistency and blend in 1–2 tablespoons additional liquid if too thick, or a few extra ice cubes if too thin.
  6. Pour into a 16-ounce glass and serve immediately.
