Instructions
- Add 1/2 cup whole milk, 2 cups vanilla ice cream, 1/4 cup drained pineapple chunks, 2 tablespoons cream of coconut, and 1/2 teaspoon vanilla extract to a blender.
- Blend on low for 10 seconds, then on medium-high for 20–30 seconds until thick and smooth. Avoid overblending.
- Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
- Pour into a chilled 16-ounce glass and top with 2 tablespoons whipped cream.
- Serve immediately with a wide straw and long spoon.
Tips
- Use canned pineapple chunks drained well for easy blending and consistent flavor. Cream of coconut adds the rich coconut sweetness typical of a piña colada.
