Instructions

  1. Prepare fresh lychee puree by blending peeled, pitted lychees until smooth.
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream and 3 oz fresh lychee puree.
  3. Add 1/2 tsp pure vanilla extract.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream.
  7. Serve immediately with a wide straw and long spoon.

Tips

  • Use canned lychee in syrup if fresh lychee is unavailable; drain well before pureeing. For a dairy-free version, substitute coconut milk and vegan vanilla ice cream.
