Instructions
- Toast the pecans in a dry saucepan over medium heat, stirring constantly, until fragrant and a shade darker, 3 to 4 minutes.
- Add the water and sugar and stir until the sugar dissolves.
- Bring to a simmer and cook gently for 10 minutes.
- Remove from the heat and let the pecans steep for 20 minutes.
- Strain through a fine-mesh sieve, pressing on the nuts to release the syrup.
- Stir in the vanilla and salt, cool and refrigerate in a clean bottle.
