Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine the diced peaches, granulated sugar, vanilla bean paste, ground cinnamon, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens and becomes translucent, about 5-7 minutes. Remove from heat and let cool completely.
- Roll out the cold puff pastry on a lightly floured surface into a 12-inch (30 cm) square. Cut into 8 equal squares.
- In a small bowl, whisk the egg with the water to make an egg wash.
- Spoon 2 tablespoons of the cooled peach filling onto the center of each pastry square, leaving a border around the edges.
- Brush the edges of each pastry square lightly with the egg wash. Fold each square diagonally into a triangle, pressing the edges firmly to seal. Use a fork to crimp the edges for a tighter seal.
- Place the turnovers onto the prepared baking sheet. Brush the tops with the remaining egg wash and sprinkle with coarse sugar.
- Let the turnovers rest at room temperature for about 5 minutes.
- Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
- Remove the turnovers from the oven and let cool on the baking sheet for 10 minutes before serving.
Tips
- For best results, ensure the puff pastry stays cold before baking to achieve maximum flakiness.
- Vanilla bean paste adds a rich aroma and visible specks of vanilla in the peach filling, but pure vanilla extract can be used as a substitute.
