Instructions
- Put the chocolate in a heatproof bowl.
- Heat the cream with the espresso powder until it just simmers.
- Pour the hot cream over the chocolate and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
- Stir in the salt and vanilla.
- Cover and refrigerate until firm enough to scoop, about 2 hours.
- Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
- Roll in the cocoa powder to coat.
