Instructions

In a bowl whisk cocoa and sugar into the measured hot water until glossy and completely dissolved.
Add marshmallow syrup and whisk or briefly blend until incorporated; fully melt chopped chocolate if it is the chosen flavor.
Add cold milk; mix until uniform, then rapidly cool the mixture below 40°F / 4°C if it is warm.
Divide the ice between two tall glasses and pour over the cold cocoa mixture.
Top each drink with 15 ml cold heavy cream and serve immediately.

Tips

Always make a smooth cocoa slurry first to avoid gritty powder in cold milk.
