  • 1.0 cup (150.0 g)fresh or canned lychee, peeled and pitted
  • 1.0 cup (240.0 g)ice cubes

Instructions

  1. Add the coconut milk to a high-speed blender.
  2. Add the lychee, shredded coconut, fine sea salt, and vanilla extract.
  3. Add the ice cubes.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds, until completely smooth.
  5. Check consistency. Blend in 1–2 tablespoons additional coconut milk if too thick, or a few extra ice cubes if too thin.
  6. Pour into a glass and serve immediately.

  • Use canned lychee drained well if fresh is unavailable. For extra creaminess, add a small scoop of vanilla yogurt or a splash of vanilla extract.
