Lüdou Bingbang (Mung Bean Popsicles)
These old-fashioned ice pops are a frozen sweet mung bean soup: the beans are simmered until they burst, sweetened, lightly thickened and partly blended so every pop holds both a creamy base and whole soft beans. They are earthy, gently sweet and a favorite way to cool off in summer. Makes 12 ice pops in about 8 hr 10 min.

Ingredients

ice pops
  • 5 ½ oz (150 g)dried green mung beans, rinsed
  • 5 cups (1200 ml)water
  • ½ cup (110 g)granulated sugar
  • 1 pinchsalt
  • 2 tbsp (15 g)glutinous rice flour
  • 3 tbsp (45 ml)cold water

Baking tools for this recipe

Instructions

  1. Pick over the dried green mung beans for stones, then rinse them in a sieve until the water runs clear.
  2. Put the beans and the 1200 ml water in a large saucepan, bring to a boil over high heat, then cover, leaving the lid slightly ajar, and simmer over low heat until the beans have split open and are very soft, 45 to 50 minutes. Stir now and then so they do not stick.
  3. Stir in the granulated sugar and salt until dissolved. Taste: the soup should taste a little sweeter than you like, because freezing dulls sweetness.
  4. Whisk the glutinous rice flour with the cold water until smooth. Stir this slurry into the simmering soup and cook, stirring, until it turns slightly glossy and coats a spoon, 2 to 3 minutes.
  5. Take the pan off the heat and pulse a stick blender in the soup a few times, just enough to purée about half the beans; leave plenty of whole beans for texture.
  6. Let the soup cool to room temperature, stirring now and then, about 1 hour.
  7. Stir well and ladle the soup into twelve 3-oz (90 ml) ice pop molds, sharing the beans evenly. Freeze for 1 hour, until slushy, then stir each pop with its stick to spread the beans and push the sticks in.
  8. Freeze until solid, at least 6 hours more. To unmold, run warm water over the outside of the molds for 10 to 15 seconds and pull the pops out.

Tips

  • Beans sink as the pops freeze; the 1-hour stir is what keeps them spread through the pop instead of packed at the tip.
  • If your molds have fixed lids with stick holes, simply shake each mold gently after 1 hour instead of stirring.
  • Older beans take longer to soften; if they are still firm after 50 minutes, add 120 ml hot water and keep simmering.

Variations

  • Red bean pops: use 150 g (3/4 cup) dried adzuki beans instead of mung beans and simmer 75 to 90 minutes until soft; everything else unchanged.
  • Milky mung bean pops: reduce the sugar to 60 g (1/4 cup plus 1 tbsp) and stir 120 g (1/3 cup) sweetened condensed milk into the cooled soup before filling the molds; freeze time unchanged.
  • Pandan-scented: tie 2 pandan leaves into a knot and simmer them with the beans, then remove before blending; times unchanged.
  • Smooth pops: blend all of the beans and strain out the skins before cooling for a creamier, bean-free pop; adds about 10 minutes, freeze time unchanged (6 hours).
