Lamingtons
Soft vanilla butter cake cut into squares, dunked in a thin cocoa icing and rolled in fine coconut. Making the cake a day ahead keeps the squares from crumbling in the icing. Makes 24 squares in about 2 hr 35 min.

Instructions

  1. Heat the oven to 350 F (175 C). Grease a 9 x 13-inch pan and line it with parchment.
  2. Beat the butter and sugar 3 to 4 minutes until pale and fluffy. Beat in the eggs one at a time, then the vanilla.
  3. Whisk the flour, baking powder and salt. Fold into the batter in three parts, alternating with the milk, just until smooth.
  4. Spread in the pan and bake 25 to 30 minutes, until golden and a toothpick comes out clean. Cool 10 minutes, turn out, and cool completely.
  5. Wrap the cooled cake and leave it overnight, or freeze 1 hour, so it firms up. Trim the edges and cut into 24 squares.
  6. For the icing, sift the powdered sugar and cocoa into a heatproof bowl set over a pan of barely simmering water. Stir in the butter and hot milk until smooth and thin enough to coat a spoon.
  7. Spread the coconut on a tray. Using two forks, dip each square into the warm icing, let the excess drip off, then roll in coconut.
  8. Place on a rack and let the icing set about 1 hour.

Tips

  • Day-old cake handles far better than fresh.
  • Keep the icing warm over the water so it stays thin.
  • Use one hand for icing and one for coconut to keep your fingers clean.
  • Good with tea or coffee.
