Instructions
- Line an 8-inch square pan with buttered parchment, leaving an overhang.
- In a large heavy saucepan (the candy foams up), stir the sugar, golden syrup, and water over medium heat until the sugar dissolves. Boil without stirring to 300°F and light amber.
- Remove from the heat, add the baking soda all at once, and whisk for just 3 to 5 seconds until it foams.
- Immediately pour into the pan and don't spread it; that deflates the bubbles. Cool completely, about 1 hour.
- Set aside a third of the chocolate. Melt the rest in a heatproof bowl over barely simmering water (or in 20-second microwave bursts), stirring, until it reaches 115°F.
- Remove from the heat and stir in the reserved chocolate until melted and the chocolate cools to 88 to 90°F. It's tempered when a streak on parchment sets glossy and firm within 5 minutes.
- Break the honeycomb into pieces, dip each in chocolate, and set on parchment until firm.
Tips
- Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
- Hot sugar causes serious burns; keep children and pets away from the stove while it cooks.
- Storage: Store airtight at room temperature for up to 1 week; humidity makes it sticky.
