Green Pea Cookies
Green pea cookies are crumbly, pale-green rounds made from ground roasted green peas, flour, powdered sugar and oil, glazed with egg yolk and baked until just golden. They taste toasty, gently savory-sweet and dissolve on the tongue, and they make a nut-free cousin of the classic peanut cookie. Makes 36 cookies in about 1 hr 28 min.

Baking tools for this recipe

Instructions

  1. Heat the oven to 340°F (170°C) and line two baking sheets with parchment paper.
  2. Grind the roasted green peas with the all-purpose flour, powdered sugar and salt in a food processor until the peas are a fine powder with no gritty bits, 1 to 2 minutes, scraping down once.
  3. Tip the pea flour mixture into a bowl. Add about 70 ml of the neutral oil and mix with a spatula, then your hand, until a smooth dough forms that holds together without cracking; add the remaining oil a teaspoon at a time only if it still crumbles.
  4. Roll the dough into 10 g balls (about 36) and set them 1 inch (2.5 cm) apart on the baking sheets; they barely spread. Press a small cross on top of each with the blunt end of a chopstick.
  5. Beat the egg yolk with the water and brush a thin coat over the top of each cookie.
  6. Bake until the tops are glossy golden and the bottoms lightly browned, 15 to 18 minutes, swapping the sheets halfway through.
  7. Cool on the sheets for 10 minutes (they are fragile while hot), then move to a rack and cool completely, about 30 minutes, before storing.

Tips

  • Use crunchy roasted (or fried) snack green peas, not frozen peas; fried peas are oilier, so you may need less oil.
  • Grinding the peas together with the flour and sugar keeps them from turning into a paste and gives a very fine, sandy crumb.
  • Do not taste the unbaked dough; it contains raw flour.
  • Good with hot oolong tea.
