Instructions

  1. In a medium bowl, beat the butter, ground ginger, ground cinnamon, and salt with a hand mixer or sturdy spatula until smooth and creamy, about 1 minute.
  2. Beat in the molasses and vanilla a little at a time until evenly blended and fluffy.
  3. Serve soft, or spoon onto plastic wrap, roll into a log, and refrigerate until firm, about 1 hour. Serve with warm biscuits, toast, rolls, scones, or pancakes.

Tips

  • Let chilled butter soften for 15 minutes before serving so it spreads without tearing the bread.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Madagascar (rich, creamy, classic), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
  • Storage: Refrigerate, covered, for up to 2 weeks or freeze for up to 3 months.
