Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, tapping out any excess flour.
  2. In a medium bowl, whisk together 2 cups (240 g) flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-5 minutes using a hand or stand mixer on medium speed.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, lemon juice, and yogurt until just combined.
  5. Add the dry ingredients to the wet ingredients in two additions, gently folding with a spatula until just incorporated. Do not overmix.
  6. Toss the blueberries with 1 tbsp (8 g) flour to prevent sinking. Gently fold the berries into the batter.
  7. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  8. Bake on the center rack for about 55 to 60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
