Flan de queso is the dense, extra-creamy Mexican flan made by blending cream cheese with sweetened condensed milk, evaporated milk and eggs, then baking it over caramel in a water bath. It slices cleanly, with a texture between a classic flan and a cheesecake and a light tang under the caramel. Makes 10 servings in about 8 hr 40 min.

Scales from a half to a double batch; give a bigger batch a little more time.
¾ cup (150 g)granulated sugar
3 tbsp (45 ml)water
1 cup (225 g)cream cheese, full-fat block, softened and cubed
1 ⅓ cups (397 g)sweetened condensed milk, one 14-ounce can
1 ½ cups (354 ml)evaporated milk, one 12-ounce can
Heat the oven to 350°F (175°C) and bring a kettle of water to a boil.
Make the caramel: cook the granulated sugar and water in a small heavy saucepan over medium heat without stirring, swirling once it colors, until deep amber, about 340°F (171°C), 8 to 10 minutes. Pour it into the cake pan right away and tilt to coat the bottom. Let it harden.
Put the cream cheese and about half of the evaporated milk in a blender and blend until completely smooth with no flecks, about 30 seconds.
Add the sweetened condensed milk, the remaining evaporated milk, the eggs, vanilla extract and fine salt. Blend on low just until smooth, 15 to 20 seconds; avoid whipping in air.
Strain the custard through a fine sieve over the hardened caramel. Cover the pan tightly with foil, set it in a roasting pan, and pour boiling water into the roasting pan to come halfway up the sides.
Bake until the edges are firm and the center jiggles only slightly when nudged, 60 to 70 minutes; a thin knife inserted near the center should come out clean, and the center should read 170 to 175°F (77 to 79°C).
Lift the pan out of the water, uncover, and cool on a rack 1 hour. Cover and refrigerate at least 6 hours or overnight.
Run a thin knife around the edge, place a rimmed serving plate on top, and invert quickly. Lift off the pan, let the caramel run down the sides, and cut into 10 slices.
Tips
Cream cheese must be soft; cold cream cheese leaves small lumps that the sieve will catch and waste.
Check early: water baths vary, and an overbaked flan turns grainy with small holes.
Chilling overnight gives the cleanest slices.
Bake until the center reaches at least 160°F (71°C) (the flan sets at about 170 to 175°F / 77 to 79°C) and keep it refrigerated. Hot caramel is about 340°F (171°C); do not touch it until cool.

Variations
Individual dessert cups: divide the caramel and custard among ten 6-ounce (175 ml) ramekins and bake in the water bath 30 to 35 minutes.
Orange-zest version: blend 2 tsp (4 g) finely grated orange zest into the custard; the sieve catches the zest but its flavor stays, and the bake time is unchanged.
Extra-dense version: use 450 g (16 oz) cream cheese and 6 eggs; bake 70 to 80 minutes.
Coffee version: dissolve 2 tsp (2 g) instant espresso powder in the evaporated milk before blending; bake time unchanged.
