A crisp sweet shortcrust shell spread with chilled vanilla pudding and packed edge to edge with fresh strawberries. A clear, glossy red glaze holds the fruit in place and keeps it shining, which is the signature look of the German version. Makes 10 servings in about 3 hr 51 min.

Scales from a half to a double batch. Laminated and yeasted doughs are easiest to handle one batch at a time; bake extra pans in rounds.
For the shortcrust, mix the all-purpose flour, granulated sugar and fine salt in a bowl. Rub in the cold unsalted butter with your fingertips until it looks like coarse crumbs, then add the beaten egg and press together into a smooth dough without kneading. Flatten into a disk, wrap and chill 30 minutes.
Heat the oven to 375°F (190°C). Roll the dough between two sheets of parchment to a 13-inch (33 cm) round, about 1/8 inch (3 mm) thick, and ease it into the tart pan, pressing it up the sides. Prick the base all over with a fork.
Line the shell with parchment and fill with pie weights or dried beans. Bake 15 minutes, remove the weights and paper, and bake 8 to 10 minutes more until evenly golden and dry. Cool completely in the pan on a rack, about 30 minutes.
For the vanilla pudding, whisk 60 ml of the whole milk with the cornstarch, granulated sugar and egg yolks until smooth. Bring the remaining milk to a simmer with the vanilla bean and its seeds, then remove the pod.
Whisk the hot milk into the yolk mixture, return everything to the saucepan and cook over medium heat, whisking constantly, until it thickens and bubbles for 1 full minute (it will be well above 160°F / 71°C), 3 to 4 minutes. Press plastic wrap onto the surface and cool to lukewarm, about 20 minutes.
Spread the vanilla pudding evenly in the cooled shell. Arrange the fresh strawberries cut side down in tight circles over the pudding, starting at the edge. Chill 15 minutes while you make the glaze.
For the red glaze, whisk the cornstarch and granulated sugar into the red fruit juice in a small saucepan. Bring to a boil, stirring, and boil 1 minute until clear and thickened. Let it stand 1 minute.
Spoon the hot red glaze evenly over the strawberries, starting in the center and working outward so every berry is coated and the gaps are filled. Chill until the glaze is set and the pudding is firm, at least 1 hour, then remove the tart ring and slice with a sharp knife.
Tips
Wash the strawberries before hulling and dry them well; wet berries stop the glaze from clinging.
A packet of German clear red Tortenguss can replace the cornstarch glaze; use it with the juice and sugar amounts on the packet.
Cool the pudding to lukewarm before spreading so it does not soften the crust, but do not let it set fully or it will not spread smoothly.
Cook the vanilla pudding until it boils for 1 full minute so the egg yolks reach well above 160°F (71°C); keep the tart refrigerated.

How long does it take to make erdbeerkuchen (german strawberry tart)?
Plan on 40 minutes of prep and 35 minutes of cooking, plus 2 hours 36 minutes to chill and rest. The recipe makes 10 servings.
How should I store erdbeerkuchen (german strawberry tart)?
Refrigerate, loosely covered, and eat within 1 day; the crust softens and the berries weep after that.
Can I make erdbeerkuchen (german strawberry tart) ahead?
Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.
Can I use a different form of vanilla?
Yes. This recipe uses 1 vanilla bean, split, seeds scraped. Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
Serve it with lightly sweetened whipped cream and a cup of coffee.
Variations
Individual tartlets: divide the dough among ten 4-inch (10 cm) tartlet pans and blind-bake 10 minutes with weights plus 5 to 7 minutes without.
Orange-zest version: add 1 tsp (2 g) finely grated orange zest to the shortcrust with the sugar and replace half the glaze juice with orange juice; times unchanged.
Sponge base (Biskuitboden): replace the shortcrust with a sponge of 3 eggs, 1/2 cup (100 g) sugar and 3/4 cup (90 g) flour, whisked until thick and baked in a 11-inch (28 cm) fluted flan pan at 350°F (175°C) for 15 to 18 minutes, then layer as directed.
Cream-topped: serve each slice with softly whipped cream sweetened with 1 tbsp (8 g) powdered sugar per 200 ml cream.
