Milk and sugar are cooked gently until thick and pale tan, then beaten and shaped into small round patties, each pressed with a pecan half. The candies are soft, milky and fudge-like, lighter in color and flavor than leche quemada. Makes 30 pieces in about 4 hr 10 min.

Scales from a half to a double batch; give a bigger batch a little more time.
Line a baking sheet with parchment and rub it lightly with a little of the unsalted butter.
In a wide, heavy 4-quart (4 L) pot, stir together the whole milk, granulated sugar and baking soda. Bring to a simmer over medium heat, stirring until the sugar dissolves; the milk will foam up briefly.
Lower the heat and keep at a gentle simmer, stirring every few minutes and scraping the bottom, until reduced by about two-thirds and thick like cajeta, about 1 hour. Keep the heat moderate so the mixture stays a pale tan rather than dark brown.
Clip on a candy thermometer and continue cooking, stirring constantly, until the mixture is very thick, leaves a trail when the spatula is drawn across the bottom and reads 236°F (113°C), 20 to 30 minutes more.
Take the pot off the heat, add the vanilla extract and beat hard with a wooden spoon until the candy thickens, loses its gloss and begins to hold its shape, 3 to 5 minutes.
Let it cool in the pot until you can handle it comfortably, 15 to 20 minutes. Butter your hands lightly with the rest of the butter.
Pinch off pieces about 1 tablespoon (15 g), roll each into a ball and flatten into a 1 1/2-inch (4 cm) patty on the prepared sheet. Press a pecan half into the top of each.
Let the candies set at room temperature until firm and dry on the surface, about 2 hours.
Tips
If the candy is too soft to hold a shape after beating and cooling, return it to the pot with a spoonful of milk and cook a few degrees higher.
If it sets too firm to shape, knead in a few drops of warm milk.
Toast the pecan halves lightly for 5 minutes at 350°F (175°C) for a deeper flavor.
Use a candy thermometer and cook to 236°F (113°C). The thick hot candy causes serious burns; stir with a long-handled spatula and let it cool before shaping by hand.

Plan on 20 minutes of prep and 1 hour 30 minutes of cooking, plus 2 hours 20 minutes to rest. The recipe makes 30 pieces.
How should I store dulce de mostachón (mexican milk candy with pecans)?
Wrap individually in waxed paper or cellophane and keep in an airtight container at room temperature for up to 1 week, or refrigerate up to 3 weeks.
Can I make dulce de mostachón (mexican milk candy with pecans) ahead?
It is at its best the day it is made; prepare it a few hours before serving.
Can I use a different form of vanilla?
Yes. This recipe uses 1 tsp vanilla extract (5 ml). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
In northern Mexico, mostachones are small milk-and-sugar candies, close cousins of jamoncillo, that are slowly cooked like cajeta until thick, shaped by hand and topped with a pecan. Serve it with café de olla.
Variations
Cinnamon version: simmer 1 cinnamon stick with the milk and remove it before the thermometer goes in; cook time unchanged.
Orange-zest version: beat 1 tsp (2 g) finely grated orange zest in with the vanilla; cook time unchanged.
Walnut topping: press 2/3 cup (60 g, about 30) walnut halves onto the patties instead of the pecans (still tree nuts); setting time unchanged.
Larger candies: shape 15 patties of 2 tablespoons (30 g) each; setting time unchanged.
