Firm, just-ripe mango simmered in dark piloncillo syrup with cinnamon and a pinch of salt until the fruit turns translucent at the edges. The short blanch before candying keeps the pieces whole and tames the tartness, so the syrup tastes of molasses, cinnamon and mango. Makes 8 servings in about 3 hr 45 min.

Scales from a half to a double batch; give a bigger batch a little more time.
2 ¾ lb (1200 g)mangoes, firm-ripe, peeled flesh (about 6 mangoes), cut into 5 cm pieces
6 ⅓ cups (1500 ml)water, for blanching, for the fruit
1 ⅓ cups (300 g)piloncillo, chopped (or dark brown sugar)
Choose mangoes that are full-colored but still firm when pressed. Peel them, slice the flesh off the pits and cut it into 5 cm pieces.
Bring the 1500 ml blanching water to a boil, add the mangoes and cook 5 to 8 minutes, just until the edges begin to soften. Drain and discard the water; this sets the pieces and takes away some sharp acidity.
In a wide, heavy, nonreactive saucepan combine the piloncillo, the 750 ml syrup water, the cinnamon stick and the salt. Simmer over medium heat, stirring now and then, until the piloncillo has fully dissolved, 8 to 10 minutes.
Slide the blanched mangoes into the syrup in one layer. Cook uncovered at a gentle simmer, turning the pieces once, until they look glossy and translucent at the edges and a knife slips in easily, 25 to 30 minutes.
Lift the mangoes into a serving dish with a slotted spoon. If the syrup is still thin, boil it 5 to 10 minutes more until it coats a spoon like runny honey. Remove the cinnamon stick.
Pour the syrup over the mangoes, cool 30 minutes, then cover and refrigerate at least 2 hours. Serve cold with plenty of syrup.
Tips
Fully soft, ripe mangoes fall apart in the syrup; slightly underripe fruit holds its shape.
Piloncillo cones are hard: chop them with a serrated knife or warm them briefly in the water to soften.
Syrup thickens as it chills, so stop reducing while it is still pourable.
Refrigerate within 2 hours of cooking; this is a fresh fruit dulce, not a canned preserve, so do not store it at room temperature.
