Donauwelle, the Danube wave, is a vanilla and chocolate sheet cake studded with sour cherries that push the dark batter down into the light, so each cut piece shows a wavy pattern. It is topped with German pudding buttercream and a thin dark chocolate layer combed into waves. Makes 15 pieces in about 7 hr 25 min.

Scales from a half to a double batch; give a bigger batch a little more time.
1 cup (200 g)unsalted butter, softened, for the cake
Make the pudding for the buttercream first so it can cool: whisk the cornstarch and 80 g granulated sugar with 100 ml of the 400 ml whole milk until smooth. Bring the remaining 300 ml milk to a boil, whisk in the cornstarch mixture, and cook, whisking, until thick and bubbling for 1 minute. Stir in the 5 ml vanilla extract, press plastic wrap onto the surface, and let it cool to room temperature, about 1 1/2 hours.
Heat the oven to 350°F (175°C). Butter the baking pan and line the base with parchment.
Make the cake: beat the 200 g softened butter, 200 g granulated sugar and 5 ml vanilla extract until pale and fluffy, about 3 minutes. Beat in the eggs one at a time. Whisk the all-purpose flour, baking powder and fine salt together and fold them in, alternating with 45 ml of the 60 ml whole milk, until smooth.
Spread half the batter evenly in the pan. Stir the unsweetened cocoa powder and the remaining 15 ml milk into the other half, then spread the cocoa batter over the light layer.
Scatter the jarred sour cherries over the top and press them lightly into the batter. Bake until risen and a skewer inserted between the cherries comes out clean, 30 to 35 minutes. Cool completely in the pan on a rack, about 1 1/2 hours.
Make the buttercream: beat the 200 g softened butter with a mixer until very pale and creamy, about 5 minutes. Add the cooled pudding a spoonful at a time, beating well after each, until smooth and fluffy. The butter and pudding must both be at room temperature or the buttercream will curdle.
Spread the buttercream evenly over the cooled cake and refrigerate until firm, about 45 minutes.
Make the chocolate top: melt the dark chocolate and 25 g butter in a bowl over barely simmering water, stirring until smooth, then cool 5 minutes. Spread thinly over the chilled buttercream. When it just begins to set, after about 10 minutes, drag a cake comb or fork through it in wavy lines.
Refrigerate until the chocolate is set, about 30 minutes. Cut into 15 pieces with a knife dipped in hot water and wiped between cuts.
Tips
Dry the cherries well so they do not make wet pockets in the cake.
If the buttercream curdles, warm the outside of the bowl briefly with a hair dryer or warm towel and beat again until smooth.
Take the cake out of the refrigerator 10 minutes before cutting so the chocolate does not crack.
Cook the cornstarch pudding until it bubbles for a full minute, and keep the finished cake refrigerated.

How long does it take to make donauwelle (danube wave cherry sheet cake)?
Plan on 50 minutes of prep and 40 minutes of cooking, plus 5 hours 55 minutes to rise, chill and rest. The recipe makes 15 pieces.
How should I store donauwelle (danube wave cherry sheet cake)?
Keep covered in the refrigerator up to 4 days because of the buttercream. Freezes well, wrapped, up to 1 month.
Can I make donauwelle (danube wave cherry sheet cake) ahead?
Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.
Can I use a different form of vanilla?
Yes. This recipe uses 1 tsp vanilla extract, for the cake (5 ml). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
Serve it with filter coffee or a cold glass of milk.
Variations
Orange-zest version: beat 2 teaspoons (4 g) finely grated orange zest into the light half of the batter; baking time unchanged.
Full German sheet: double every amount and bake in a 12 x 16-inch (30 x 40 cm) sheet pan with 2-inch (5 cm) sides for 35 to 40 minutes; cuts into 24 pieces.
Individual portions: bake in 18 lined muffin cups with 2 or 3 cherries pressed into each, 18 to 22 minutes, then pipe the buttercream and dip the tops in the chocolate.
