Baking tools for this recipe

Instructions

  1. Beat the eggs with the brandy, olive oil, orange juice and salt. Stir in the flour and baking powder to make a firm dough, kneading about 5 minutes until smooth. Rest 30 minutes, covered.
  2. Divide into 6 pieces. Roll each very thin and cut into strips about 3 x 10 inches (8 x 25 cm).
  3. Heat the frying oil to 350 F (175 C).
  4. Lower a strip into the oil and quickly fold or roll it with two forks into a ribbon or roll. Fry 30 to 60 seconds until golden and bubbly.
  5. Drain on paper towels and repeat, working in small batches so the oil stays hot.
  6. Simmer the honey, sugar, water, cinnamon stick and lemon juice 5 minutes. Keep warm.
  7. Dip each diples in warm syrup briefly, drain on a rack, then top with walnuts and cinnamon.

Tips

  • Roll the dough thin enough to see your hand through it.
  • Keep the oil at 350 F; too cool and they absorb grease.
  • Dip just before serving for the crispest texture.
  • Keep the frying oil at 350 F (175 C), never leave it unattended, and cool completely before disposal.
