Soft, fluffy yeast buns steamed in a tightly covered pan with milk, butter and sugar, so their tops stay pale and pillowy while the bottoms fry into a crackly caramel crust. They are served warm in a pool of homemade vanilla sauce as a sweet main meal or dessert. Makes 8 dumplings in about 2 hr 30 min.

Scales from a half to a double batch; give a bigger batch a little more time.
4 cups (500 g)all-purpose flour
¼ oz (7 g)instant yeast
¼ cup (50 g)granulated sugar, for the dough
¾ tsp (5 g)salt
1 cup (250 ml)whole milk, lukewarm, for the dough
1(50 g)egg, room temperature
¼ cup (60 g)unsalted butter, melted and cooled, for the dough
¾ cup (200 ml)whole milk, for the pan liquid
3 tbsp (40 g)unsalted butter, for the pan liquid
2 ½ tbsp (30 g)granulated sugar, for the pan liquid
For the dough, mix the all-purpose flour, instant yeast, 50 g granulated sugar and salt. Add the 250 ml lukewarm whole milk, the egg and the melted butter and knead until smooth, elastic and no longer sticky, 8 to 10 minutes. Cover and let rise in a warm place until doubled, about 1 hour.
Turn the dough onto a lightly floured surface, divide it into 8 equal pieces (about 110 g each) and shape each into a tight, smooth ball. Set them on a floured board, cover with a towel and let rise until puffy, about 30 minutes.
Meanwhile make the vanilla sauce: heat the 500 ml milk with the vanilla bean and its seeds until steaming. Whisk the egg yolks, 60 g sugar and cornstarch in a bowl, then slowly whisk in the hot milk. Return to the pan and cook over low heat, stirring constantly, until it thickens enough to coat a spoon and reaches 160°F (71°C), 4 to 6 minutes; do not boil. Strain, discard the bean and keep warm.
In the skillet, bring the 200 ml milk, 40 g butter and 30 g sugar to a simmer over medium heat, stirring until the butter melts.
Set the dough balls in the pan close together but not squashed. Cover immediately with the tight-fitting lid; if it does not seal well, wrap a damp towel around the rim.
Cook over medium-low heat without lifting the lid until the milk has been absorbed and you hear the bottoms crackling and smell caramel, 25 to 30 minutes.
Turn off the heat and wait 2 minutes, then lift the lid straight up so condensation does not drip on the buns. Lift the dumplings out with a spatula, caramel side up, and serve warm on a pool of vanilla sauce.
Tips
Never lift the lid while they steam: the buns collapse if the steam escapes early.
Listen for the crackle; it means the liquid is gone and the sugar is caramelizing, so watch closely so the bottoms do not burn.
A heavy, even-heating pan gives the best caramel crust.
Cook the egg-yolk vanilla sauce to 160°F (71°C) and refrigerate leftovers.

How long does it take to make dampfnudeln (german steamed yeast dumplings)?
Plan on 30 minutes of prep and 30 minutes of cooking, plus 1 hour 30 minutes to rise. The recipe makes 8 dumplings.
How should I store dampfnudeln (german steamed yeast dumplings)?
Dampfnudeln are best freshly made. Refrigerate leftover dumplings and vanilla sauce separately, covered, for up to 2 days; reheat the dumplings covered in a 325°F (165°C) oven for 10 minutes and the sauce gently on the stove.
Can I make dampfnudeln (german steamed yeast dumplings) ahead?
It is at its best the day it is made; prepare it a few hours before serving.
Can I use a different form of vanilla?
Yes. This recipe uses 1 vanilla bean, split and seeds scraped. Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
Serve it with hot black tea.
Variations
Cinnamon-sugar: sprinkle the finished dumplings with 2 tbsp (25 g) sugar mixed with 1 tsp (2 g) ground cinnamon and serve with melted butter instead of vanilla sauce.
Mini portions: shape 16 balls of about 55 g and steam them in the same pan for 18 to 22 minutes.
Orange-zest version: knead 2 tsp (4 g) finely grated orange zest into the dough; cooking time unchanged.
With plum compote: serve each dumpling with 2 tbsp (40 g) warm plum butter (Powidl) alongside the vanilla sauce.
