Instructions

  1. Combine the sugar and 1/4 cup water in a heavy saucepan and heat over medium, stirring only until the sugar dissolves.
  2. Boil without stirring, swirling the pan, until golden amber like honey, 8 to 10 minutes (about 330°F (166°C)).
  3. Remove from the heat and slowly whisk in the warm cream; it will bubble up.
  4. Whisk in the hot water, then return to low heat for 1 to 2 minutes, whisking, until smooth.
  5. Remove from the heat and stir in the vanilla bean paste and salt.
  6. Cool and refrigerate in a clean bottle.

Tips

  • Vanilla bean paste adds the dark specks and custard flavor; the seeds of 1 vanilla bean work too.
  • Stop the caramel at golden; this syrup should taste toasty and creamy, not bitter.
