Scales from a half to a double batch; give a bigger batch a little more time.
7 oz (200 g)small sago pearls
8 ½ cups (2000 ml)water, for boiling, for the sago
¾ cup (150 g)gula melaka (palm sugar), finely chopped
7 tbsp (100 ml)water, for the syrup
¼ oz (10 g)pandan leaves, about 3 leaves, tied in a knot
Bring the 2000 ml water to a hard rolling boil in a large pot. Sprinkle in the small sago pearls while stirring so they do not clump.
Boil hard, stirring often, until the pearls are mostly clear with a small white dot in the centers, 6 to 8 minutes. Turn off the heat, cover and let stand until fully translucent, about 10 minutes.
Tip the sago into a fine sieve and rinse under cold running water, stirring gently, until the pearls feel smooth rather than gluey, about 1 minute. Drain well.
Pack the sago firmly into the six cups, smooth the tops, cover and refrigerate until set and cold, at least 2 hours.
Meanwhile, simmer the gula melaka with the 100 ml water and the pandan leaves over low heat, stirring, until dissolved and syrupy, about 5 minutes. Strain through a fine sieve and cool to room temperature, about 30 minutes.
Warm the coconut milk with the salt over low heat, stirring, just until steaming, 2 to 3 minutes; do not let it boil. Cool to room temperature, about 20 minutes.
To serve, run a thin knife around each cup and turn the sago out into a small bowl. Spoon about 3 tbsp coconut milk around each pudding and top with 1 to 2 tbsp gula melaka syrup.
Tips
Small sago pearls (about 2 mm) are traditional; tapioca pearls of the same size work the same way.
Serve the coconut milk at room temperature rather than cold, since chilling firms the fat and dulls the flavor.
Real gula melaka is soft, dark and smoky; if you must substitute, use dark brown sugar with 1 tsp molasses.
Contains coconut; check with your doctor if you avoid tree nuts.

Variations
Large-mould version: pack all the sago into a 3-cup (750 ml) bowl, chill 3 hours, and turn out onto a rimmed plate to serve at the table.
Coconut cream version: use 200 ml (generous 3/4 cup) coconut cream instead of the coconut milk for a richer pool; warming time unchanged.
Pandan sago: stir 2 tbsp (30 ml) pandan juice into the rinsed sago before packing it into cups for a pale green pudding.
