Instructions

  1. Line an 8-inch square pan with parchment, leaving an overhang on two sides.
  2. In a heavy saucepan, combine the condensed milk, chips, and salt. Stir over low heat until the chips melt and the mixture is smooth and thick, 5 to 7 minutes. Or microwave in 45-second bursts, stirring well each time.
  3. Remove from the heat and stir in the vanilla.
  4. Quickly fold in the sweetened shredded coconut.
  5. Spread evenly in the pan.
  6. Refrigerate until firm, at least 2 hours. Lift out using the parchment and cut into 1-inch squares.

Tips

  • Use chocolate chips or a good bar you like to eat; fudge made with candy coating tastes waxy.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
  • Storage: Store airtight in the refrigerator for up to 2 weeks or freeze for up to 3 months.
