Instructions

  1. Line an 8-inch square pan with parchment, leaving an overhang on two sides.
  2. In a heavy saucepan, combine the condensed milk, chips, salt, and browned butter. Stir over low heat until the chips melt and the mixture is smooth and thick, 5 to 7 minutes. Or microwave in 45-second bursts, stirring well each time.
  3. Remove from the heat and stir in the vanilla.
  4. Spread evenly in the pan.
  5. Refrigerate until firm, at least 2 hours. Lift out using the parchment and cut into 1-inch squares.

Tips

  • Use chocolate chips or a good bar you like to eat; fudge made with candy coating tastes waxy.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
  • Storage: Store airtight in the refrigerator for up to 2 weeks or freeze for up to 3 months.
