Instructions

  1. Add the unsweetened coconut milk beverage and vanilla extract to a high-speed blender.
  2. Add the frozen banana and shredded coconut.
  3. Add the ice cubes and fine sea salt.
  4. Blend on low speed for 10 seconds, then increase to high and blend for 35 to 50 seconds until completely smooth.
  5. Check the consistency. If too thick, blend in 1 to 2 tablespoons of additional coconut milk. If too thin, add a few extra ice cubes or frozen banana slices and blend again.
  6. Pour into a 16-ounce glass and serve immediately.
