Baking tools for this recipe

Instructions

  1. Simmer the ginger slices in the 480 ml water, covered, for 30 minutes until fork-tender. Drain, saving the water as a mild ginger tea if you like.
  2. In a wide saucepan, combine 450 g sugar and 240 ml water. Heat until the sugar dissolves, then add the ginger.
  3. Simmer gently, uncovered, for 40 to 50 minutes, stirring occasionally, until the syrup is thick and the ginger looks translucent. The syrup should reach about 225 F (107 C).
  4. Reduce the heat near the end and stir often to avoid scorching until the syrup is nearly gone.
  5. Drain the ginger over a bowl, saving the syrup, and spread the slices on a wire rack for 15 minutes.
  6. Toss the still-tacky slices in the finishing sugar. Dry on the rack for 8 to 12 hours until no longer sticky.

Tips

  • Young ginger has less fiber, so it turns tender fastest.
  • Slice thinly and evenly for even cooking.
  • Keep the syrup; it flavors tea, cocktails and cakes.
  • Good with hot tea.
