Classic Fair Cotton Candy
Cotton candy is sugar melted and spun through tiny openings into fine threads that gather on a cone. This version uses a countertop floss machine and flavored floss sugar for the carnival look and a clean vanilla taste. Makes 8 cones in about 25 minutes.

Baking tools for this recipe

Instructions

  1. Place the flossing sugar in a dry bowl and stir in the vanilla flavoring (and color, if using) with a fork until no wet clumps remain.
  2. Spread the flavored sugar on a tray and let it air-dry 10 minutes so it flows freely.
  3. Set the cotton candy machine on a stable counter and preheat it for the time in its manual, usually 5 to 8 minutes, with the spinner head empty and the bowl in place.
  4. Spoon about 2 tablespoons of sugar into the center of the spinner head while it runs.
  5. Within about 30 seconds fine threads begin to collect on the inside wall of the bowl.
  6. Hold a paper cone at the rim and sweep it around the inside of the bowl, rolling it to wind the threads into a cloud.
  7. Repeat with more sugar, adding only a spoonful at a time, until you have made 8 cones.
  8. Switch off and let the machine cool completely before cleaning the bowl with a damp cloth.

Tips

  • Keep the room dry; humidity makes floss collapse into sticky strands.
  • Only add sugar a spoonful at a time or the head clogs.
  • Use sugar made for floss machines; fine or powdered sugar will not spin.
  • The machine heater runs very hot; keep fingers and loose clothing away from the spinning head and let it cool fully before touching.
