Baking tools for this recipe

Instructions

  1. Scoop the ice cream into 4 bowls and return to the freezer.
  2. Melt the butter with the brown sugar and cinnamon in a large skillet over medium heat, stirring until bubbling and smooth, about 2 minutes.
  3. Add the bananas cut side down and cook 1 to 2 minutes per side until just tender and glazed.
  4. Remove the pan from the heat. Add the banana liqueur, then add the rum.
  5. Carefully tilt the pan toward the flame or use a long lighter to ignite the alcohol, standing back with hair and sleeves clear. Let the flames burn out, about 30 seconds, gently shaking the pan.
  6. Spoon the bananas and sauce over the ice cream and serve at once.

Tips

  • Use bananas that are yellow and still firm, not spotty.
  • Take the pan off the heat before adding the alcohol, keep a pan lid nearby to smother flames, and never pour alcohol straight from the bottle into a hot pan.
  • Skip the flame by simmering the sauce 2 minutes with the alcohol to cook it off.
  • Good with vanilla ice cream.
