Instructions
- Combine the sugar, water and broken cinnamon sticks in a small saucepan.
- Bring to a simmer over medium heat, stirring until the sugar dissolves, about 3 minutes.
- Lower the heat and simmer gently for 5 minutes.
- Take the pan off the heat, cover and let the cinnamon steep for 30 minutes; taste and steep longer for a stronger syrup.
- Strain into a clean bottle, discard the cinnamon and stir in the vanilla.
- Cool completely, seal and refrigerate.
