Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until thoroughly combined.
  3. In a separate bowl, beat the eggs. Add the buttermilk, melted butter, vanilla bean paste, and instant espresso powder; whisk until smooth.
  4. Fold the wet ingredients into the dry ingredients gently until just combined, leaving the batter slightly lumpy. Stir in the finely chopped bittersweet chocolate.
  5. Allow the batter to rest for 10 minutes to activate the leaveners and let flavors meld.
  6. Lightly grease the waffle iron. Pour about 1/2 cup (120 ml) batter per waffle onto the iron.
  7. Cook waffles for 4 to 6 minutes or until crisp and fully cooked; steam will lessen and edges look set.
  8. Carefully remove waffles and keep warm on a wire rack set over a baking sheet in a low (200°F/95°C) oven if needed.
  9. Serve warm, topped with whipped cream and a dusting of cocoa powder or shaved bittersweet chocolate for added chocolate indulgence.

Tips

  • Adding espresso powder intensifies the chocolate flavor without making waffles taste like coffee.
  • Use vanilla bean paste or scrape actual vanilla bean seeds for a richer vanilla layer complementary to the chocolate.
