Instructions
- Preheat the oven to 375°F (190°C). Lightly butter and flour a 12- or 18-cavity madeleine pan, tapping out excess flour.
- Sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and fine sea salt in a medium bowl; set aside.
- In a large heatproof bowl, whisk the eggs and granulated sugar. Set the bowl over a pan of simmering water (double boiler), whisking constantly until the mixture is warm to the touch (about 110°F or 43°C) and sugar is dissolved, about 3 to 4 minutes.
- Remove from heat and beat the egg mixture with an electric mixer on high speed until thick, pale, and tripled in volume, about 5 minutes. Beat in the vanilla bean paste.
- Gently fold the sifted flour mixture into the egg mixture in 2 additions, being careful not to deflate the batter.
- Fold in the melted and cooled butter gradually until fully incorporated and the batter is smooth.
- Cover the batter with plastic wrap and refrigerate for 20 minutes to rest and chill.
- Spoon the batter into the prepared madeleine molds, filling each about three-quarters full.
- Bake for 10 to 12 minutes, or until the madeleines are puffed and spring back when lightly pressed. Remove from oven and immediately unmold onto a wire rack to cool completely, about 5 minutes.
- Melt the chopped dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Dip the flat side of each cooled madeleine into the melted chocolate, letting excess drip off.
- Place the dipped madeleines on parchment paper and allow the chocolate to set at room temperature before serving.
Tips
- Be careful folding the flour and butter into the whipped eggs to retain the airiness essential for light madeleines.
- Use vanilla bean paste instead of extract for a more pronounced vanilla flavor that pairs well with chocolate.
