- Whisk the water, sugar, corn syrup, cocoa and salt in a medium saucepan until smooth.
- Bring to a gentle boil over medium heat, whisking constantly.
- Simmer for 2 minutes, whisking, until glossy and slightly thickened.
- Remove from the heat, add the chopped chocolate and stir until melted and smooth.
- Stir in the vanilla and cool for 10 minutes before using; it thickens as it cools.
