Instructions
- Place the dark chocolate in a heatproof bowl.
- Heat the cream in a small saucepan until it just simmers around the edges, then pour it over the chocolate. Let stand for 3 minutes without stirring.
- Add the salt and vanilla and stir from the center outward until smooth and glossy.
- Let stand at room temperature until thick enough to pipe, 1 to 2 hours (or refrigerate for 30 to 45 minutes, stirring every 10 minutes). For a lighter filling, beat it for 1 minute once thickened.
- Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.
Tips
- Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
- Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
- Storage: Keep at cool room temperature for up to 1 day or refrigerate for up to 1 week; soften before piping.
