  • 2.0 tbsp (32.0 g)cashew butter
  • 1.0 tbsp (15.0 ml)honey or maple syrup
  • ½ tsp (2.5 ml)pure vanilla extract
  • ½ cup (120.0 g)ice cubes
  • 1.0small pinch fine sea salt

Instructions

  1. Add the unsweetened coconut milk beverage to a high-speed blender.
  2. Add the frozen mango chunks, cashew butter, honey or maple syrup, a small pinch of fine sea salt, and 1/2 teaspoon pure vanilla extract.
  3. Add the ice cubes.
  4. Blend on low for 10 seconds, then increase to high and blend for 35–50 seconds until completely smooth.
  5. Check the consistency. If too thick, blend in 1–2 tablespoons additional coconut milk. If too thin, add a few more ice cubes or frozen mango chunks and blend again.
  6. Pour into a 16-ounce glass and serve immediately.

Tips

  • Substitute almond or sunflower butter for cashew butter if desired. For a thicker smoothie, use less coconut milk or more frozen mango.
