Instructions

  1. Line a baking sheet with parchment.
  2. In a large skillet, stir the sugar, water, cinnamon, and salt over medium heat until bubbling.
  3. Add the nuts and cook, stirring constantly, until the syrup coats them and turns dry and sandy, 5 to 7 minutes. Stir in the vanilla (it sizzles).
  4. Spread on the parchment, separate the nuts, and cool completely, about 20 minutes.
