Instructions

  1. Beat the butter until creamy, about 1 minute.
  2. Add the confectioners' sugar, cocoa, flour, and salt and beat on low speed until combined.
  3. Beat in the milk and vanilla until smooth and fluffy, about 2 minutes. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.

Tips

  • To heat-treat flour, microwave it in 30-second bursts, stirring, until it reaches 165°F; cool before using. Raw flour isn't safe to eat.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
  • Storage: Refrigerate the filling, covered, for up to 3 days. Serve filled doughnuts the same day and keep them chilled.
