Instructions
- Sprinkle the gelatin over the cold water in a small bowl and let it sit for 5 minutes, until it softens and looks wrinkled (this is called blooming).
- Warm the cream, sugar, and vanilla in a saucepan over medium heat, stirring, just until the sugar fully dissolves and the mixture steams. Don't let it boil.
- Remove from the heat and whisk in the bloomed gelatin until it melts completely and the mixture is smooth.
- Stir in the bourbon off the heat.
- Pour into six molds or glasses and refrigerate for at least 4 hours, until set with a gentle wobble in the center.
- To unmold, dip each mold briefly in warm water and invert onto a plate, or serve straight from the glass.
Tips
- Bourbon's caramel and oak notes echo vanilla; a wheated bourbon gives the smoothest result.
- Don't toss the scraped pods: tuck them into a jar of sugar for homemade vanilla sugar.
- No vanilla bean? Use 2 teaspoons pure vanilla extract, 1 tablespoon vanilla bean paste or 1 teaspoon vanilla powder instead. Add it where the recipe adds the seeds; if the bean is steeped in hot milk or cream, stir the swap in after cooking, off the heat.
- Choosing vanilla: Ugandan vanilla (bold, chocolatey, smoky) suits this recipe best; Indonesian (deep, woody, savory) is a great alternative, and any pure vanilla works.
