Instructions

  1. Put the chocolate in a heatproof bowl.
  2. Heat the cream until it just simmers.
  3. Pour the hot cream over the chocolate and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
  4. Stir in the salt, vanilla, and black sesame paste.
  5. Cover and refrigerate until firm enough to scoop, about 2 hours.
  6. Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
  7. Roll in the sesame seeds to coat.

Tips

  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
  • Storage: Refrigerate airtight for up to 1 week. Let stand 15 minutes before serving.
