Instructions

  1. Put the chocolate in a heatproof bowl.
  2. Heat the cream until it just simmers.
  3. Pour the hot cream over the chocolate and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
  4. Stir in the salt, vanilla, and thick caramel sauce.
  5. Cover and refrigerate until firm enough to scoop, about 2 hours.
  6. Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
  7. Roll in the cocoa powder to coat, and sprinkle with the flaky sea salt.
