Baking tools for this recipe

Instructions

  1. Heat the oven to 350 F (175 C). Grease and line an 8 inch (20 cm) square pan.
  2. Whip the eggs and sugar for 8 minutes until thick and tripled. Fold in the sifted flour and baking powder, then the melted butter and warm milk.
  3. Pour into the pan and bake 20 to 25 minutes until golden and springy. Cool and cut into 9 squares.
  4. Slice each square in half horizontally. Fill with jam and a thin layer of whipped cream, then sandwich.
  5. Whip the cream, powdered sugar and vanilla to stiff peaks. Pipe a dome of cream on each square to form the frog's head.
  6. Roll the green fondant to 1/8 inch (3 mm). Drape each cake with fondant, smooth down the sides and trim.
  7. Make a slit for the mouth with a knife. Add two small white fondant balls for eyes with a chocolate dot.

Tips

  • Chill the cakes before covering for a clean finish.
  • Dust the work surface with powdered sugar while rolling the fondant.
  • Smooth the fondant gently with the palm of your hand.
  • Keep refrigerated because of the cream filling.
