Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan over medium heat, combine diced apples, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and lemon juice.
- Cook, stirring frequently, until apples soften and release juice, about 5 minutes.
- Sprinkle cornstarch over the apple mixture, stir well to combine, and cook for 1-2 minutes more until thickened. Remove from heat and let cool to room temperature.
- Roll out the cold puff pastry on a lightly floured surface to about 12 x 12 inches (30 x 30 cm). Cut into 8 equal squares.
- Place about 2 tablespoons of cooled apple filling near one corner of each puff pastry square, leaving about 1/2-inch (1 cm) border.
- Brush edges lightly with water, then fold pastry over the filling to form a triangle. Press edges firmly to seal and crimp with a fork.
- In a small bowl, whisk together the egg and water for the egg wash. Brush the tops of the turnovers generously with egg wash.
- Sprinkle coarse sugar over the turnovers for a crunchy finish.
- Cut a small slit on top of each turnover to allow steam to escape.
- Place turnovers on the prepared baking sheet and bake for 22-25 minutes until puffed and golden brown.
- Remove from oven and let cool on the baking sheet for 10 minutes before serving.
Tips
- Use a sharp knife or pizza cutter to cut puff pastry squares cleanly to maintain even edges.
- Vanilla extract enhances the apple filling's aroma; do not skip or substitute with imitation vanilla.
